Comforting Turkey Soup (Made With Turkey Carcass)

This comforting turkey soup is super tasty, easy to make, and is sure to warm you up on a cold winter day!

Ingredients
  

For The Broth:

  • 1 leftover turkey carcass
  • 2 carrots cut in half
  • 1 onion cut in half
  • 1 celery stalk
  • 3 garlic cloves crushed
  • 2 fresh rosemary sprigs
  • 4 fresh thyme sprigs
  • 2 bay leaves
  • water enough to cover the carcass in the pot

For The Soup:

  • homemade turkey broth
  • 2-3 cups cooked turkey meat shredded or chopped
  • 1 large yellow onion chopped
  • 2 garlic cloves minced
  • 4 carrots chopped
  • 3 celery stalks chopped
  • 3 large russet potatoes washed and chopped
  • 1 cup frozen corn
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1/4 cup fresh parsley optional

Instructions
 

Make the broth:

  • Place the turkey carcass in a large stockpot. Add water, onion, carrots, celery, garlic, bay leaf, fresh thyme, fresh rosemary, and a pinch of salt.

  • Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, skimming any foam from the surface occasionally.
  • Remove the carcass and strain. Discard solids (making sure no bones remain in the broth) and set broth aside.

For the soup:

  • In a large pot, heat olive oil over medium heat. Add diced onion and celery. Sauté for 5 minutes until softened.

  • Stir in minced garlic, potatoes, salt, pepper, thyme, and rosemary. Cook for 1 minute until fragrant.

  • Pour in the homemade turkey broth and bring to a gentle simmer. Add shredded turkey and let simmer for 15 minutes to blend flavors.

  • Add in the carrots and corn and simmer uncovered for 15-20 minutes until carrots are tender.

  • Ladle soup into bowls and garnish with fresh parsley. Serve and enjoy!
