What you will need:
- leftover turkey carcass
- cooked turkey
- celery
- carrots
- potatoes
- onions
- corn
- chicken broth
- fresh thyme
- fresh rosemary
- bay leaf
- garlic
Make the Turkey Broth
- Place the turkey carcass in a large stockpot. Add water, onion, carrots, celery, garlic, bay leaf, salt, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, skimming any foam from the surface occasionally.
- Remove the carcass and strain the broth. Discard solids and set broth aside.


Make the Soup
In a large pot, heat olive oil or butter over medium heat. Add diced onion and celery. Sauté for 5 minutes until softened. Stir in minced garlic, potatoes, salt, pepper, thyme, and rosemary. Cook for 1 minute until fragrant. Pour in the homemade turkey broth and bring to a gentle simmer. Add shredded turkey and let simmer for covered for 15 minutes to blend flavors.



Add in the carrots and corn and simmer uncovered for 15-20 minutes until carrots are tender.
