Comforting Turkey Soup (Made From The Carcass)

This homemade turkey soup is the perfect way to use up your Thanksgiving leftovers! Made with a rich, flavorful broth from a turkey carcass and filled with tender turkey, hearty vegetables, and traditional spices, it’s a cozy and satisfying meal for cold winter days. This soup is simple, delicious, and packed with homemade goodness! 🍲

What you will need:

  • leftover turkey carcass
  • cooked turkey
  • celery
  • carrots
  • potatoes
  • onions
  • corn
  • chicken broth
  • fresh thyme
  • fresh rosemary
  • bay leaf
  • garlic

Make the Turkey Broth

  1. Place the turkey carcass in a large stockpot. Add water, onion, carrots, celery, garlic, bay leaf, salt, thyme, and rosemary.
  2. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, skimming any foam from the surface occasionally.
  3. Remove the carcass and strain the broth. Discard solids and set broth aside.

Make the Soup

In a large pot, heat olive oil or butter over medium heat. Add diced onion and celery. Sauté for 5 minutes until softened. Stir in minced garlic, potatoes, salt, pepper, thyme, and rosemary. Cook for 1 minute until fragrant. Pour in the homemade turkey broth and bring to a gentle simmer. Add shredded turkey and let simmer for covered for 15 minutes to blend flavors.

Add in the carrots and corn and simmer uncovered for 15-20 minutes until carrots are tender.

Serve & Enjoy

Ladle soup into bowls and garnish with fresh parsley. Serve hot with crusty bread or crackers.

Ingredients

For The Broth:

  • 1 leftover turkey carcass
  • 2 carrots cut in half
  • 1 onion cut in half
  • 1 celery stalk
  • 3 garlic cloves crushed
  • 2 fresh rosemary sprigs
  • 4 fresh thyme sprigs
  • 2 bay leaves
  • water enough to cover the carcass in the pot

For The Soup:

  • homemade turkey broth
  • 2-3 cups cooked turkey meat shredded or chopped
  • 1 large yellow onion chopped
  • 2 garlic cloves minced
  • 4 carrots chopped
  • 3 celery stalks chopped
  • 3 large russet potatoes washed and chopped
  • 1 cup frozen corn
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1/4 cup fresh parsley optional

Instructions

Make the broth:
